They give the ball backspin, which gives the ball loft, which gives the ball/club accuracy.

Have you ever tried to put spin on a ping-pong ball with a paddle that lost its rubber facing? In other words with a plain , shiny wood face? No spin and floater type shots are uncontrollable. Without grooves the iron face would be a smooth , hard surface with no gripping action resulting in erratic ball flight. Grooves put spin on the ball. They are mostly important in the wedges and shorter irons unless you’re a world class player and you can make a 3 iron back up. The grooves on a driver are mainly for decoration though. Square grooves are considered unfair because it makes a sharper leading edge, allowing the club to get a better grip on the ball on the downswing, resulting in more spin. If you have an old wedge that you don’t care about, take a rotozip to it and make the groves deeper and sharper. You will be able to see the difference in spin immediately.

Good grooves (also mentioned as TOP LINE) give more traction and as a result better spin to the ball. That’s why Pros always maintain their Wedge groove as good as possible.
Square groove compress the ball more and can result in crazy back spin to the ball. I heard it will be passed by USGA though.
